Functional Foods Laboratory - Université de Moncton The main research interest of the Functional Foods Laboratory is the study of the effects of bioactive peptides, derived from different protein sources, on mucosal and tumoral immunity. Currently, the research team of Dr Chantal Matar is working on understanding the immunomodulatory and anti-infectious effects of these bioactive peptides in vivo using murin models. Recent studies involve understanding the role of these peptides on the regression of mammary tumours. Other studies also aim at understanding the nutraceutical effect of agro-food products and the extraction of the active compounds for the biopharmaceutical industry from small fruits and marine sub-products. Dr Chantal Matar directs research projects on the maximisation of the extraction of flavanoids from small fruits, such as blueberries and cranberries. She also directs another project on the application of novel bio-procedures to increase the value of marine sub-products. Her research team is made up of many post-doctoral researchers, professional researchers and student-researchers. |
